Brigadeiro Cake

Brazilian chocolate balls

Cake

  • 2.5 cups granulated sugar
  • 3/4 cups oil
  • 1/4 cup butter
  • 3 eggs
  • vanilla
  • 3 cups flour
  • 1 cup cocoa powder
  • baking powder, salt
  • 1.5 cups milk

Filling & Frosting

  • 2x400ml cans of sweet condensed milk
  • 7.7 oz cream "drained"
  • 1 cup milk
  • 2 table spoons cornstarch
  • 1.5 cups chocolade powder (Kaba)
  • 1 tbsp margarine

Zubereitung

  • Start with the frosting:
    • whisk: milk, chocolate powder, corn starch
    • add cream, condensed milk, margarine; stir
    • cook over medium heat until mixture reaches thick, pudding-like consistency (12-15 minutes)
    • pour in a bowl, wrap to contact and let cool for 2h
    • fridge for another 2h
  • now the cake
    • 180 °C
    • 3 round cake pans, greased
    • whisk: flour, cocoa powder, baking powder, salt
    • cream: oil, butter, sugar
    • add eggs
    • add milk and dry ingredients slowly
    • bake in three pans for 30-35 mins to light crumble
    • let cool
  • final assembly
    • layer and cover sides
    • add chocolate sprinkles everywhere
