Lasagna Cupcakes
These are wonderful little snacks: they're essentially Lasagna to go. It's Lasagna. Small. To go. What's not to love?
You'll need to prepare your favourite bolognesa recipe beforehand.
Ingredients
- Muffin pan
- puff pastry
- Bolognesa sauce
- lasagna sheets, ideally fresh
- shredded cheese
- some butter
Instructions
- Butter the muffin pan liberally
- Put a piece of puff pastry into each muffin indentation. I've used square pieces and it worked well.
- Break/cut the lasagna sheets into parts that fit your muffin forms.
- Stack bolognesa sauce and pasta into each muffin form.
- Top with a bit of shredded cheese.
- If your puff pastry doesn't exactly fit the form, fold the overhang over the stacked insides.
- Bake for ~30 minutes at 190-220° C. You can increase temperature at the end to brown the cheese.
- Let the cakes cool a bit before taking them out of the form.
They'll be solid enough not to deflate and you'll have amazing little Lasagna snacks.
