One-Pot-Spätzle with Räuchertofu

Quick and tasty hearty pasta dish, via Chefkoch

Ingredients

  • onion, diced
  • mushrooms
  • smoked tofu
  • cream, one cup
  • stock
  • fresh Spätzle
  • fresh spinach

Instructions

  • In a large pot, fry the onions, mushrooms and smoked tofu for 5 minutes (you might want to fry the smoked tofu a little longer).
  • Add the stock, cream and the fresh Spätzle, mix well, and cook on medium-low heat for about 10 minutes with closed lid.
  • Add the fresh spinach and mix it in. Let it wilt for as long as you like.
  • Garnish with some grated cheese, if you like.
