Triple-Chocolate layer cake
This cake is made of three chocolatey layers, each of which is good on its own. It's not hard to make, but takes a lot of time. You need to prepare each layer on its own and let it cool and set before you can start with the next layer.
Layer 1: Kladdkaka
The bottom layer is a heavy chocolate kladdkaka, which will hold up the other, softer layers very well.
Ingredients
- 100g Butter
- 210g sugar
- 2 eggs
- 80g flour
- 3 tbsp cocoa powder
- 1 tsp vanilla sugar
Instructions
Mix barely and bake in a round cake pan, lined with paper all around, especially on the sides. Bake at 175 °C for 10-15 minutes, until the outer edge has set but the center is still a bit soft. Don't take the cake out of the form, let it cool in there.
Layer 1.1: Chocolate ganache?
I think this cake could be made into a four-layer cake by adding a thin veneer of chocolate ganache between layers 1 and 2. I didn't do it yet, so more research is needed.
Layer 2: Chocolate mousse
This is a standard chocolate mousse, made a bit firmer so that it'll hold the final layer.
Layer 3: White cream
To make a soft top layer, this layer is simply whipped cream with melted white chocolate in it, and some gelatine to make it hold.
